Hi Marlon - I place a "bead" of honey around the rim of the gass, then I finely grate fresh ginger, place it on a shallow plate with raw sugar then twist the inverted cocktail glass onto the plate to "transfer" the raw sugar/ginger mix to the honey coated rim of the glass... Make sense? You could also mix the honey, raw sugar and ginger together at once and apply, but I find my method more practical on the bar... Glad you enjoyed the post. Cheers! Paul

Paul,
Your blog is excellent.
Interesting, informative, excellently written and visual presentation. Light, upbeat, enthusiastic and includes great buys on good wine.

Your teaching us to appreciate and enjoy wine leads to an attitude of appreciating and enjoying life (including people) in general.

Thanks,
Dave Lewis

Hi Paul,

I've seen this cocktail on several menus in Boston over the past 3 months. The descriptions are equally divided between the cognac base and the gin base with the same historical context. You are, as ever, on the cutting edge. Or better said, on the sugared rim, of all things sophisticated adult beverage!
